BANANA AND CHOCOLATE CHIP MUFFINS

INGREDIENTS
- 1 3/4 cups of plain flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon salt
- 3 large ripe bananas (about 1 1/2 cups)
- 3/4 cup of sugar
- 80 ml of melted butter (1/3 rd of a cup)
- 1 tsp vanilla essence
- 1/4 cup milk (at room temperature)
- 1 large egg
- 1/2 cup chocolate chips
- 1 cup = 250 ml
DIRECTIONS
- STEP 1Preheat oven to 180 degrees C (350 degrees F). Arrange muffin cases in a muffin tray. Small cups will yield 10 muffins, and large cups or cases will yield 6 muffins.
- STEP 2Mix dry ingredients in a separate bowl – plain flour, baking soda, baking powder, cinnamon powder, and salt.
- Step 3In a large bowl, mash 3 ripe bananas which should be around 1 and a half cups or slightly more. To this add melted butter and sugar. Mix for 2 minutes till all the sugar is dissolved.
- STEP 4Then add the rest of the ingredients – egg, milk, and vanilla essence and mix well.
- STEP 5Now add the dry ingredients to the mashed bananas mixture and mix well.
- STEP 6Finally, add chocolate chips which can be anywhere between 1/2 cup and 1 cup. (I have added 1/2 cup)
- Step 7Pour the batter evenly and fill almost 3/4 portion of the muffin cases. Sprinkle some more chocolate chips on top of the batter.
- Step 8Bake for 25 – 30 minutes. After 25 minutes, insert a clean knife in the center of a muffin which should come out clean. If not, bake for 5 – 7 minutes more.
- STEP 9Once baked, cool completely before serving.
- STEP 10Note: Bananas have to be overripe and soft. Firm bananas will not give the same effect. All ingredients should be at room temperature.
